Banana Pancakes – Nutrition packed Breakfast

3 Ingredients only!

We both ( me and husband!) love having indulgent breakfasts. I mean , yes everyone loves good food but we can still do away with an ordinary dinner but we must have a good breakfast. Over-worked weekdays hardly give us time for whip fancy stuff early morning. On Weekends we jam up together in the kitchen and cook some delicious breakfast things. Not always English. But usually with a personal touch, an experiment of sorts. 

And that’s the only time when my husband helps me in kitchen out of his choice. This disclaimer is a must here, in case you were wondering I cracked a jackpot in him. Because his excitement is limited till the time breakfast is laid and devoured. Kitchen is a mess after all of that , with most of the fancy pots out for cooking because – hey! the chef aint gonna cook magic in ordinary pans. And cleaning that mess is my responsibility. Tell me that your home situation is the same, I will feel better!

But seriously! you should try cooking a meal together , it’s so bonding and such a refreshing activity to do together.

Well! Fancy breakfast on a weekday surely gets you more brownie points and I definitely earned more than enough today. A breakfast that gets cooked in less than 5 minutes, is delicious, warm and soothing for winter weather and is nutritious – checks all boxes, isn’t it! 

Nutritious Breakfast leads to a productive day.

These banana pancakes are gluten free, sugar free and suit all diet forms – paleo, low carb et cetera. My recipe has just three basic ingredients. And this basic form can be enhanced in many different ways to make it more indulgent. 

Here’s how you can whip a fancy banana pancake in less than 5 minutes

Ingredients you would need to make 2 medium sized pancakes ( medium size = size of a quarter plate)

  • 2 Eggs
  • 2 Bananas
  • Pinch of Cinnamon Powder

Step by Step Procedure

In a bowl, add the bananas and mash with a fork. The bananas I was using were not very soft so I had to give it a churn in the blender. Also, blender saves times.

To the mashed bananas, break open the 2 eggs and whisk the mixture for good one minute. The trick to fluffy and soft pancakes lies in this step. Whisk the mixture to a smooth consistency. Add a pinch of cinnamon powder and whisk.

Put the pan on stove and grease it with few drops of ghee ( or butter) and pour this mixture. Give it a round shape using spatula or any shape of choice. Flip it over after 20-25 seconds and let it cook from the other side as well. Straight from pan to plate.

I added some sliced bananas and half a teaspoon of peanut butter , the plate looked amazing and husband polished this off in seconds. If you are feeling extra happy, add some whipped cream on top or  maple syrup or blueberry compote. Ah! delicious.
